Always choose flowers that are firm with tightly packed leaves.
Keep the flower wrapped in plastic cover & store in the vegetable crisper of the refrigerator.
Banana flower consists of multiple layers of bracts or pale pink leaf like structures enclosing a row of florets in each layer.
Peel off the pale pink leaf like structures and detach the florets.
From each floret discard a string like structure with a black tip and also a transparent feather like structure as these both are non edible.
Its quick and easy to discard the non edible structures from the larger mature florets.
In case of smaller immature florets; detach & hold the bottom of the florets in one hand; gently rub their top with the palm of the other hand and discard the non edible structures.
Chop the florets finely & soak them in salted buttermilk to prevent discoloration.
The pale pink color bracts appears to be pale yellow in color as they descend forming a bulb like structure.
The whole bulb like structure along with the pale yellow bracts & the florets are tender and edible.
Chop the whole bulb like structure finely and soak them along with other chopped florets in salted buttermilk.
Drain buttermilk, steam cook in a pressure cooker for about 3 to 5 min until tender & not mushy.
Cook them in to any delightful, delicious dish of your choice!!!
