Beetroot Raita

Prep Time: 15 min
Serves: 2


Ingredients
  1. Beetroot - 1 medium sized
  2. Thick yogurt - 1.5 cups
  3. Roasted cumin powder - 1/4 tsp
  4. Kashmiri red chilly powder - 1/2 tsp
  5. Fresh mint leaves - to garnish
  6. Salt - to taste
  7. Sugar - 1.5 tsp
Method
  1. Peel & wash beetroot well in water.
  2. Slice in to two halves & pressure cook for 2 whistles.
  3. Give a standing time to the pressure cooker (say for about 10 min) before opening the lid.
  4. Dice the cooked beetroot; set aside.
  5. Whisk curd along with sugar, salt, roasted cumin powder & red chilly powder.
  6. Add diced beetroot & combine.
  7. Serve as a side dish for variety rice, pulaos & briyanis.
NOTE
  • The rich color of beetroot will bleed and change the color of yogurt to dark pink; hence plan your meal accordingly.
