Bhindi Masala

Other name - Bhindi tomato masala

Serves: 3 to 4


Ingredients
  1. Bhindi / Ladys finger - 250 gms
  2. Tomatoes (finely chopped) - 3 medium sized
  3. Thick tamarind extract - 1/4 cup
  4. Sambhar powder - 1 tsp
  5. Red chilly powder - 1 tsp
  6. Salt - to taste
  7. Water - 3/4 cup
For seasoning
  1. Vegetable oil - 1/2 tbsp
  2. Sesame oil - 1/2 tbsp
  3. Mustard seeds - 1/2 tsp
  4. Asafoetida powder - 1/4 tsp
  5. Curry leaves - few
Method
  1. Wash; pat dry bhindis & chop them in to half inch pieces.
  2. Heat oil in a wok, add mustard seeds & let it splutter.
  3. Add asafoetida powder, curry leaves & saute for few sec.
  4. Add chopped bhindi pieces, salt & stir fry in high flame for about 3 min.
  5. Cover with lid & cook for another 3 min until crisp.
  6. Add finely chopped tomato, sambhar powder, red chilly powder; cover with lid & cook for 3 min.
  7. Add tamarind extract, water; adjust salt; cover & cook for another 4 to 6 min.
  8. Serve hot with chapathis, phulkas and rotis.
