Watermelon ~ Lemon Cooler

Prep Time: 10 min
Serves: 2


Ingredients
  1. Watermelon (deseeded & cubed) - 2 cups
  2. Lemon juice - juice of half lemon
  3. Sugar - 6 tsp (or) to taste
  4. Salt - 1/4 tsp
Method
  1. Blend all ingredients together in a blender / mixie / food processor.
  2. Adjust ingredients according to taste.
  3. Serve either chilled or at room temperature.
NOTE
  • Can substitute sugar with honey if preferred.
  • If you are not supposed to use sugar / honey, then you could substitute with any other artificial sweeteners available at the local provision stores.

Watermelon ~ Strawberry Smoothie

Prep Time: 20 min
Serves: 3


Ingredients
  1. Watermelon (deseeded & diced) - 3 cups
  2. Strawberries (sliced) - 8 to 10
  3. Sugar (or) Honey - to taste
  4. Fresh mint leaves - 15 to 20
  5. Salt - 1/4 tsp
Method
  1. Wash watermelon & wipe with a clean, dry cloth.
  2. Cut, deseed & dice them; set aside.
  3. Discard stem leaves of strawberry; wash; pat dry & slice them roughly.
  4. Separate mint leaves from stem.
  5. Soak in water for about 5 to 7 min.
  6. Gather all leaves; wash again for about 2 to 3 times; squeeze out excess water.
  7. Blend all ingredients in a blender until smooth.
  8. Garnish with mint leaves or strawberries.
  9. Serve either chilled or at room temperature.

Sapota Milkshake

Prep Time: 10 min
Serves: 1


Ingredients
  1. Sapota (Chikku) - 2 medium sized
  2. Milk - 1 cup
  3. Honey - to taste
Method
  1. Wash & peel sapota.
  2. Blend in a mixie/blender along with half cup milk & honey.
  3. Add rest of the milk & blend well.
  4. Serve either chilled or at room temperature.

Ginger ~ Mint Lemonade

Prep Time: 1 hr
Yields: approx 2 liters


Ingredients
  1. Dark brown sugar - 1/4 cup
  2. White sugar - 3/4 cup
  3. Fresh grated ginger - 1 tbsp
  4. Fresh mint leaves - 1/2 cup
  5. Water - 1 cup + 2 cups + 8 cups
  6. Lemon juice - 1 cup (or) juice of 8 to 9 medium sized lemons
  7. Salt - 1 tsp (or) to taste
Method
  1. Heat a cup of water in low flame; add brown sugar & sugar; stir until both the sugars are completely dissolved; switch off gas; strain; cover with lid & set aside to cool.
  2. Bring two cups of water to boil, add fresh grated ginger, fresh mint leaves; cover with lid & set aside for 20 min; strain; cover with lid & set aside to cool; discard ginger & mint leaves.
  3. Extract juice from eight to nine lemons, strain; cover with lid & set aside.
  4. Take a water jug/large vessel along with eight cups of water; add a cup of strained lemon juice, strained & cooled ginger-mint extract; strained sugar syrup, salt & stir well.
  5. Adjust salt, sugar & lemon juice according to taste.
  6. Store in plastic fridge bottles & refrigerate.
  7. Serve either chilled or at room temperature.
NOTE
  • Can also exclude dark brown sugar & use only ordinary white sugar for the recipe
  • Can also serve along with a dash of chaat masala / roasted cumin powder / black salt.
  • Can also replace sugar with similar measure of honey.
  • For those who are calorie conscious, replace sugar with any other artificial sweetener.
