Carrot & Raisin Salad

A delightful combination of crunchy carrots and soft raisins in honey dressing.

Prep Time: 20 min
Serves: 2

Ingredients
  1. Grated carrots - 2 cups
  2. Raisins - 1/2 cup
  3. Walnut kernels (crushed) - 8
For the vinaigrette/dressing
  1. Green chilly (finely chopped) - 1
  2. Fresh mint leaves (finely chopped) - 1 tbsp
  3. Black pepper powder - 1/4 tsp
  4. Lemon juice - 2 tbsp
  5. Black salt - 1/4 tsp
  6. Salt - to taste
  7. Honey - 1 tbsp
For garnishing
  1. Whole fresh mint leaves - 5 to 6
METHOD
  1. Add grated carrots, crushed walnuts to a large mixing bowl.
  2. Wash raisins, drain, squeeze out excess water and add to the grated carrots; mix well.
  3. Combine finely chopped green chilly, mint leaves, black pepper powder, lemon juice, black salt, salt and honey in a separate bowl.
  4. Just before serving add the dressing to the grated carrots and toss well.
  5. Garnish with the remaining mint leaves.
NOTE
  • Always add the salad dressing just before serving.
