Strawberry Salad

Prep Time: 20 to 25 min
Serves: 2
to 3

Ingredients
  1. Strawberries - 1.5 cups
  2. Onion - 1 medium sized
To caramelize nuts
  1. Walnuts + Silvered almonds - 1/2 cup
  2. Sugar - 4 tbsp
For the vinaigrette/dressing
  1. Extra virgin olive oil - 2 tbsp
  2. Mayonnaise - 3 tbsp
  3. Lemon juice - juice of half lemon
  4. Orange juice - 1/4 cup
  5. Black pepper powder - 1 tsp
  6. Poppy seeds (dry roasted) - 1 tbsp
  7. Dill (finely chopped) - 1 tbsp
  8. Cilantro (finely chopped) - 2 tbsp
  9. Sugar - 1/2 tbsp
  10. Salt - 1/4 tsp
  11. Milk - 2 tbsp
To garnish
  1. Caramelized nuts - 1/2 cup
  2. Scallion / Spring onion - 2 tbsp
Method to caramelize walnuts & silvered almonds
  1. Place walnuts,silvered almonds in a saucepan along with sugar and a teaspoon of water.
  2. Heat over medium heat until the sugar melts, say for about 3 min.
  3. Once the nuts are coated in amber sugar syrup, remove them on to a plate, use fork to tease them apart from the clumps.
  4. If they are too hard to separate just reheat mildly to ease the clumps.
Method to prepare the vinaigrette/dressing
  1. Whisk together oil, mayonnaise, lemon juice, orange juice, black pepper powder, poppy seeds, sugar, salt & milk.
  2. Toss all greens with about half of the vinaigrette; add more vinaigrette as per your taste.
Method to prepare salad
  1. Wash, remove stalks and slice the strawberries.
  2. Peel, wash & thinly slice the onion.
  3. Combine the sliced strawberries, thinly sliced onion, the dressing; toss well.
  4. Garnish with caramelized nuts & spring onions.
NOTE
  • Always add the salad dressing just before serving.
  • Adjust vinaigrette/dressing ingredients as per your taste.
  • I have added pitted black olives here for the recipe; but didn't like the taste.
  • Can either include or exclude olives according to your taste.
