Tomato Soup

Serves: 3


Ingredients
  1. Tomatoes - 5 medium sized
  2. Onion (finely sliced) - 1 medium sized
  3. Garlic pods - 8
  4. Ghee/Butter - 2 tsp
  5. Bay leaf - 2
  6. Cinnamon - 1 inch stick
  7. Cardamom - 2
  8. Cloves - 2
  9. Water - 2 cups
  10. Sugar - 1/2 tsp
  11. Salt - to taste
  12. Black pepper powder - 1/2 tsp
  13. Snapin - Herb Blend Mix (store bought) - 1/2 tsp
Method
  1. Wash & pat dry tomatoes.
  2. Peel and wash garlic.
  3. Peel, wash and slice onion.
  4. Heat ghee/butter in a pan, add bay leaf, cinnamon, cardamom, cloves, sliced onions, garlic and saute for a min or two.
  5. Transfer sauteed contents to a vessel, add whole tomatoes, water & pressure cook for 4 to 5 whistles.
  6. Give a standing time to the pressure cooker before opening the lid.
  7. Cool & peel off the skin from tomatoes.
  8. Strain the remaining ingredients;discard bay leaf, cinnamon, cardamom & cloves.
  9. Blend peeled tomatoes & strained contents in a blender/mixie.
  10. Heat once again, adjust salt and sugar.
  11. Stir in black pepper powder & the herb blend mix.
  12. Garnish with finely chopped cilantro or basil leaves.
