Ingredients
- Pineapple chunks - of 1 whole fruit
- Roasted, peeled peanuts - 4 tbsp
- Walnuts (chopped) - 2 tbsp
- Raisins - 1 tbsp
- Lemon zest - of one large lemon
- Lemon juice - juice of whole zested lemon
- Thick coconut milk (store bought) - 5 tbsp
- Dark brown sugar - 2 tbsp
- Black pepper powder - as reqd
- Honey - 2 tbsp
- Salt - to taste
- Cilantro (finely chopped) - 2 tbsp
- Mint leaves (finely chopped) - 2 tbsp
- Slice pineapple in to chunks; grate lemon zest; set aside.
- In a large mixing bowl, add pineapple chunks, peanuts, walnuts, raisins & combine.
- Take another bowl, add the grated lemon zest.
- Squeeze out the juice of the zested lemon in the same bowl.
- Now add thick coconut milk, dark brown sugar, black pepper powder, honey, salt & mix well.
- Pour the dressing on to the pineapple chunks and nuts mixture; combine well.
- Garnish with chopped cilantro & mint leaves.
- Serve either chilled or at room temperature.
- I have used store bought Dabur Hommade Coconut milk for the recipe.
