Thai Style ~ Pineapple Salad ~ My Version!!!

Serves: 2


Ingredients
  1. Pineapple chunks - of 1 whole fruit
  2. Roasted, peeled peanuts - 4 tbsp
  3. Walnuts (chopped) - 2 tbsp
  4. Raisins - 1 tbsp
For the dressing
  1. Lemon zest - of one large lemon
  2. Lemon juice - juice of whole zested lemon
  3. Thick coconut milk (store bought) - 5 tbsp
  4. Dark brown sugar - 2 tbsp
  5. Black pepper powder - as reqd
  6. Honey - 2 tbsp
  7. Salt - to taste
For garnishing
  1. Cilantro (finely chopped) - 2 tbsp
  2. Mint leaves (finely chopped) - 2 tbsp
Method
  1. Slice pineapple in to chunks; grate lemon zest; set aside.
  2. In a large mixing bowl, add pineapple chunks, peanuts, walnuts, raisins & combine.
  3. Take another bowl, add the grated lemon zest.
  4. Squeeze out the juice of the zested lemon in the same bowl.
  5. Now add thick coconut milk, dark brown sugar, black pepper powder, honey, salt & mix well.
  6. Pour the dressing on to the pineapple chunks and nuts mixture; combine well.
  7. Garnish with chopped cilantro & mint leaves.
  8. Serve either chilled or at room temperature.
NOTE
  • I have used store bought Dabur Hommade Coconut milk for the recipe.
