Yellow pumpkin Soup

A delicious combination of cooked pumpkin & spices!!!

Prep Time: 10-15 min

Cooking time: 20-25 min

Serves: 2


Ingredients
  1. Yellow pumpkin (cubed) - 250 grams
  2. Onion (sliced) - 1 medium sized
  3. Ghee - 1 tsp
  4. Garlic pods - 4
  5. Cloves - 3
  6. Cinnamon stick - 1 inch piece
  7. Water - 1 1/2 cups
  8. Salt - to taste
  9. Black pepper powder - to taste
  10. Snapin - Herb Blend Mix (store bought) - to taste
  11. Toasted bread pieces (optional) - to garnish
Method
  1. Heat ghee in a non-stick pan.
  2. Add cloves, cinnamon stick, garlic pods, onion & saute.
  3. Add the cubed pumpkin & saute for a min or two.
  4. Transfer contents to a container, add water & pressure cook for about 3 to 6 whistles.
  5. Strain & keep the stock aside.
  6. Blend the cooked vegetable in a mixer.
  7. Combine blended mixture, stock, salt & stir.
  8. Cover & cook on medium heat for about 2 min; bring to boil.
  9. Serve hot garnished with black pepper powder, herb blend mix & toasted bread pieces.
