Raw mango Pachadi

Other names - Pacha maanga sweet pachadi / Pacha maanga vella pachadi

Serves: 2


Ingredients
  1. Raw mango - 1 medium sized
  2. Thick jaggery syrup - 1/2 cup
  3. Dry ginger powder - 1/2 tsp
  4. Turmeric powder - 1/4 tsp
  5. Salt - pinch
For Seasoning
  1. Sesame oil - 3 tsp
  2. Mustard seeds - 1/4 tsp
  3. Broken red chillies - 3 to 4
  4. Curry leaves - few
Method
  1. Wash, pat dry & dice mango.
  2. Heat oil in a pan, add mustard seeds & let it splutter.
  3. Add broken red chillies, curry leaves; saute for few sec.
  4. Add the diced mangoes, saute for 2 to 3 min
  5. Add half cup of water & salt; cover with lid; cook for 3 min.
  6. Add thick jaggery syrup, dry ginger powder; cook for 3 min; switch off gas.
NOTE
  • Can also replace dry ginger powder with asafoetida powder.
  • Increase the quantity of jaggery if you have a sweet tooth.
